My mom’s recipe, takes me back to those wonderful days childhood days every time…
I am sure you will enjoy these simple yet delicious instant rava dosas / vegetable pancakes as much as I do.
Ingredients
- Rava/Semolina -1 cup (Available at any local Indian store)
- Sour yogurt (plain) – 1/2 cup
- Water – 1/2 cup
- Onion – 1 small
- Tomatoes – 1 small
- Green chillies – 2 (You can skip this if you are not into spice)
- Salt to taste
- Oil
Steps
Mix rava, yogurt and water in a large bowl to form a batter.
Add salt and leave aside for 15 mins.
Add in chopped onions, tomatoes and green chillies. Mix well.
Heat a frying pan and grease with oil. Make sure to keep the heat to medium.
Pour and spread batter on the pan evenly making a circular shape, trying to create as thin a layer as possible. Sprinkle oil on sides.
Cook on medium heat for one min. Flip and cook the other side for a min.
Remove from the pan when both sides are cooked golden brown.
Serve and enjoy with your favorite dipping sauce like my favorite green chutney.
Notes
- Adjust the water proportion according to your rava coarseness so that the batter is not too runny.
- Don’t panic if the first pancake disintegrates or not able to hold it’s shape. After a couple rounds things will begin to look better.
- Mix in any veggies of your choice to customize per your taste.
- Be patient and fry on medium heat, high heat would cause burning on top and the dosa would be undercooked on the inside.
