Fenugreek/Methi Rice

Fenugreek/Methi leaves are a great source of nutritional goodness and are highly beneficial if consumed on a regular basis. These potent leaves have a distinct bitter taste which I happen to love. Introduce this super vegetable into your diet in a simple and tasty way.

Ingredients

  • Methi leaves – 1 cup (fresh or frozen- found at your local Indian store)
  • Rice – 1 cup
  • Water – 2 cups
  • Onion – 1 small
  • Green chillies – 2
  • Salt to taste
  • Cumin seeds
  • Cloves – 2
  • Curry leaves
  • Oil – 2 tbsp

Steps

Wash throughly and soak the rice in water for about 15 mins.

Heat oil in a deep pan and add cumin seeds. Once the seeds begin to flutter, add in curry leaves, cloves, green chillies and chopped onions. Fry onions until translucent.

Drain soaked rice and add to the pan along with well washed methi leaves. Cover with water and mix in salt to taste.

Cover and cook until rice is fluffy, making sure it does not stick to bottom of the pan by stirring in between.

Serve with yogurt or your favorite curry. Garnish with coriander leaves, or even shredded cheese. Delish!
