Chocolate makes everything OK – I believe in this philosophy. If you are like me, you will definitely enjoy these delicious fluffy low-fat chocolate chip pancakes, made with whole wheat flour.
Ingredients
- 1 egg
- 1/4th cup milk (I have used skim)
- 11/2 tbsp sugar
- 1/8th tbsp salt
- 1 tbsp baking soda
- 1/2 tbsp vanilla essence
- 1/4th cup whole wheat flour
- Bittersweet chocolate chips (I have used Ghirardelli 60% cacao)
- Oil/Butter
Steps
In a bowl, beat your egg with milk. Add in sugar, salt, baking powder, vanilla essence and mix vigorously.
Gently mix in whole wheat flour, adding little at a time to avoid forming lumps.
Make a semi-thick batter which is not too runny with pouring consistency. Adjust flour/milk quantities until you reach desired consistency.
Warm a non-stick pan (I prefer non-stick as it helps to reduce the amount of butter/oil you would need). Add some oil or butter and pour batter to desired thickness and size. Sprinkle with chocolate chips.
Let the pancake cook to golden brown on low heat, flip and cook the other side.
Stack these fluffy pancakes and top with with your favorite fruit. Pour maple syrup or honey if you are more of a sweet tooth.
These pancakes are not overly sweet and just perfect for my taste! Let me know what you think!
